Fix preprocessor_config.json for Qwen2.5-VL models

I've raised a PR to fix the issue by updating "image_processor_type" to "Qwen2VLImageProcessor".

The same update has been applied in the Qwen/Qwen2.5-VL-(N)B-Instruct repo, as Qwen2_5_VLImageProcessor was causing an "Unrecognized image processor" error.
